Baked Blueberry Oatmeal

Deciding what to eat for breakfast, the most trivial, yet crucial decision of a weekend morning.

Every one knows breakfast is the most important meal of the day, but a lot of us are guilty of skipping it. On the rare occasion that you do actually have time to sit down and have breakfast; and that is a good breakfast that took more effort than pouring a bowl of near-stale cereal and shovelling it down before running out the door, it can be a tough decision to make. When I get the chance, I'm stuck. Perhaps this is due to my FOMO or my indecisiveness but when a brunch menu is put in front of me, all real life issues go out the window and this becomes a pressing issue.

If you suffer from a similar problem, let me make the decision for you this time. Baked oatmeal. Who knows why it's so good, but it won't let you down.






SERVES 2 (Feel free to double, triple or quadruple the recipe)
TIME: 30-40 MINUTES

YOU WILL NEED:
1 CUP OATS
1 CUP SEMI-SKIMMED MILK
3 TBSP RAW OR BROWN SUGAR
1/4 CUP BLUEBERRIES
1/4 TSP BAKING POWDER
1/2 TSP CINNAMON 
1 PINCH SALT
BUTTER

Pre-heat the oven to 225 C or 435 F and grease your choice of baking dish with butter (small enough to serve 2 or the amount you want).

In a mixing bowl, combine the oats, sugar, baking powder, cinnamon and salt. Mix in the blueberries. 

Transfer mixture to your baking dish and pour the milk over, covering the oats. 

Sprinkle with a little bit more sugar. 

Bake for 25-30 minutes or until the top is golden and the inside is soft. It should be firmer than regular oatmeal (almost like a cake). 

Top with more milk, honey or fruit if that's what floats your boat!
