Vanilla and Cinnamon Roasted Almond Butter

When I have a craving for something, there's really no stopping me. God help the man that has to deal with me when I'm pregnant. I'll go out of my way to get whatever it is I'm craving at that moment and if I can't get exactly what I want, it's the next best thing, or in this case, the next better thing.Yesterday, I had a crazy need for peanut butter, which is actually really unlike me. Not just any peanut butter though, it had to be homemade. When I realised the key ingredient to my desired snack was no where to be found in my kitchen, and also realised, that this was probably for the best, I continued my quest and found myself going down a slightly healthier (and in my opinion, tastier) path.
Two packets of almonds were nestled in my pantry and when I saw them I had a lightbulb moment.
YOU WILL NEED:
APPROX 300G ALMONDS
2 TSP GROUNDNUT OIL
1/2 TSP CINNAMON
1/4 TSP VANILLA EXTRACT
1/2 TSP SALT
Yields approximately 1 jar.
Time: 30 minutes
After roasting |
Place almonds in blender |
Start by roasting the almonds on 170 C or 350 F for 10 minutes.
Once roasted, add the almonds to the blender and blend for 2-3 minutes until powdery. Continue to blend for 15 minutes pausing every 2-3 minutes to scrape the sides down so that the almonds are equally blended.
When the almonds start to form a liquid paste (be patient, they will) add the rest of the ingredients and blend for another 5 minutes until it has a thinner consistency. (You might need to pause to scrape sides down).
Pour into jar of your choice and seal!
Enjoy with toast or in oatmeal or give a jar as a gift! (Or eat on its own.. whatever floats your boat)!
