Colourful Heirloom Tomato Salsa

Yesterday, my mum surprised me with some amazing treats from Borough Market. Most people wouldn't be that grateful but one of the things that gets me excited in life is really good produce, especially really good tomatoes. Sad, I know but true.
Whenever I have a bonding day with my mum it usually consists of visiting some kind of food-oriented festival or market and it's usually the best day ever. So, yesterday when I found out she went with out me, I felt a little betrayed until she came back with bags of giant flat leaf parsley and radio-active-looking tomatoes.
Deciding what to do with them was the hard part.
YOU WILL NEED:
VARIETY OF COLOURED TOMATOES (APPROX 4 MEDIUM)
1 CLOVE GARLIC
1 HANDFUL CHOPPED PARSLEY
1/4 GREEN CHILLI CHOPPED
1/4 RED CHILLI CHOPPED
1 GARLIC LEAF (OPTIONAL)
2 TBSP LEMON JUICE
3 TBSP LIME JUICE
2 TBSP OLIVE OIL
SALT AND PEPPER
Finely chop the tomatoes. Combine all ingredients and mix in olive oil. Add salt and pepper to taste!
Enjoy with plain grilled fish (that's what I did), with steak or even as a dip!

ReplyDeleteBeautiful heirloom tomatoes and your chopped tomato salad must have been delicious with the fish. I'm growing several different varieties of heirloom tomatoes that will be transplanted into my garden soon.
