Soft Boiled Eggs with Rosemary Roasted Asparagus SoldiersWe all know if we've packed on a few pounds and there's a 'swimmy' holiday coming up, the best thing to do is to skip the carbs.
This should be easy enough... Until you realize, you have nothing to dip into your eggs in the morning.. Uh oh.
Of course, if you're one of those lucky people with a metabolism the speed of a race car, you can dismiss the last two sentences and enjoy bread galore with your eggs. If sadly you're not, (don't worry, you're not the only one) I'm here to provide you with a solution to committing 'carbocide'.
You will need:
125G FRESH ASPARAGUS
2 CLOVES GARLIC
HANDFUL OF FRESH ROSEMARY
SALT AND PEPPER
OLIVE OIL
2 EGGS
Pre-heat oven to 170 Degrees C or 340 F
Place asparagus on a baking tray with two whole cloves of garlic. Drizzle with olive oil. Sprinkle rosemary, salt and pepper.
Roast for 12-15 minutes.
When the Asparagus are almost finished, boil the eggs for five minutes. (Or your preferred time).
Rinse the eggs in cool water when finished boiling to prevent them cooking any longer on their own.
Sprinkle with grated Parmesan.
