This is not so much a recipe as it is a life lesson...
Give your leftovers a makeover.
I experienced this a few days ago and wanted to show you that just because your hard work no longer looks like what it's supposed to, it doesn't have to go to waste!
I had made some brussel sprouts, some roast potatoes, and a loaf of spelt bread to accompany roast chicken the night before. (The chicken was demolished unfortunately).
I put all of the ingredients in a hot pan with a teaspoon of olive oil and let them sit there for about 10 minutes until they were all crispy.
I then transferred them onto a plate and fried an egg in the same hot pan.
Needless to say, the egg found it's home on top of the newly made-over leftovers.
I sprinkled some chopped tomatoes on top as a last minute thought...
(Never judge a book by it's cover.)

DeleteIt's SO important to use up leftovers - I hate throwing away food and it's a huge global issue. This looks like a lovely way to use them up, yum!
